- Stir-Frying: Slice the steak tips into bite-sized pieces

We make our tips from Wagyu sirloin flap meat, a cut that is well-marbled, rich in deep beefy flavor, and features a distinctive longitudinal grain. Here in New England, this is the preferred style, while the West Coast often uses tri-tips instead.

The flap meat is approximately 3-4 inches thick in length. We cut to rectangular shapes, at times the shapes are odd and triangular just to use the ends of the flap meat. You can easily grill them.
Our flap meat is available both marinated and un-marinated. This means you can marinate it at home if you wish. However, since the steak tips are Wagyu, marinating isn’t necessary—a simple seasoning of salt and pepper works perfectly.
Chefs usually marinate sirloin tips in something sweet and tangy, preparing them well in advance to allow the meat to absorb the flavors. If you want to marinate them, some common marinating options include everything from barbecue sauce, teriyaki, soy sauce, lemon or lime, red wine, vinegar, maple syrup, balsamic vinegar, Italian dressing, to even some of your favorite side drinks including Kool-aid or cola.
