 Because BBQ has to be fun:

  1. Grab a beverage of nice herbal iced tea and pray or meditate.
  2. Apply vegetable oil to the ribs and add your favorite rub. Today I recommend our TX Rub. It is all natural and kosher. A winning rub used on a first place brisket at the Houston Live Stock and Rodeo BBQ Cook-off. TX Rub tastes great and its very versatile for anything beef. 
  3.      Get your smoker to 375 degrees and place your beef back ribs ribs in the smoker. Measure the temperature in between the middle bones close to the spine without touching the bones.
  4. The internal temperature your shooting for is 165 degrees. At that point bring the smoker temperature to about 225 to 275 degrees. The the lower the temperature the longer the cook).
  5. Once the ribs are at an internal temperature of 208 degrees they are done. All the collagen should have broken down and the meat should be very tender.
  6. Slice and enjoy.
